I've worked in the baking industry, and Fat daddios is really close, if not just as good as the stuff I'm used in professional bakeries. I love these pans, they are sturdy and bake everything thoroughly and evenly. I love using the 8"x2" pans to make a nice thick key lime pie. The removable bottoms make is super easy to remove all baked goods. I'm only disappointed they stopped making the size pan I love. I do recommend only hand washing, and never cutting the baked goods in the pan. Knives will leave awful gouge marks in the aluminum.

When the product arrived it was deeper than I was picturing, but I realized it fit the specs just right, I was just picturing an 8x1 inch pan in my head. I didn't have any problems with seepage through the bottom. In fact the only thing about this pan that I didn't really care for was the deep sides. If I had realized I was picturing it wrong, I would have searched for a shallower pan, but, all in all, I think it was worth the money and am I satisfied.

This bottom of this pan warped slightly after one use. It is still usable, but this is kind of annoying.

Also, the glue used to attach the paper labels is pretty much impossible to remove- it took a lot of soaking and scouring and there is still a trace. It is also a pain to clean but that is what happens when you buy fluted. In spite of all my grumbling, it's really not a bad pan, and it's a useful size to have when cooking for two.

These tart pans are super hard to clean, after about 3-4 months of once a week use. The size is great, but I'm throwing mine out because stuff gets stuck even if I butter the pan profusely and soak for days.

The pan also leaks from the bottom, so make sure to put a pan underneath!
